Formosa Oolong loose tea – soft, fruity and floral from Taiwan

A Formosa Oolong is a partially oxidised tea from Taiwan, the island that was formerly called “Formosa”. You taste a soft, round flavour with a floral and fruity note, and a long, mild aftertaste. A tea for those who want something different from black or green tea, and a lovely introduction to oolong.

Oolong is oxidised between green and black tea and naturally contains caffeine. What makes this a delightful tea: you can steep the leaves multiple times, and each infusion tastes slightly different. Ideal for a quiet tea moment, with a biscuit or during an afternoon in our tea house in Berlaar.

Preparation method

  • Water temperature: 90-95 °C
  • Steeping: 3-5 minutes
  • Dosage: 1 teaspoon per cup or about 10-12 grams per litre
  • Second and third infusions possible

Storage

Store in an airtight tea tin in a dry, dark place.

You can taste it in the tea house, or take it home from the tea shop in Berlaar or the webshop.

Recipe: oolong panna cotta with peach (4 servings)

Oolong has a soft, fruity-floral flavour that pairs beautifully with cream and fruit.

Ingredients

  • 300 ml cream
  • 200 ml milk
  • 2 teaspoons Formosa Oolong (± 5 g)
  • 50 g sugar
  • 3 sheets of gelatine
  • 1 ripe peach or pear, or a spoonful of peach compote, to serve

Preparation

  1. Heat cream and milk just below boiling point. Remove from heat and add the oolong. Let steep for 8 minutes.
  2. Strain the tea from the cream and press the leaves lightly. You now have about 450 ml of infused cream.
  3. Soak the gelatine in cold water for 5 minutes.
  4. Reheat the cream with the sugar until the sugar has dissolved (do not boil). Squeeze out the gelatine and stir it in until fully dissolved.
  5. Pour into 4 glasses or bowls. Allow to cool and refrigerate for at least 4 hours.
  6. Serve with slices of peach or pear, or a spoonful of compote.
