Blue Tea (Butterfly Pea) – Color Changing Herbal Tea

Butterfly Pea Flower is a special blue loose tea made from the dried flowers of the butterfly pea, with a soft and refined taste.

Popular for its enchanting blue colour and unique health benefits. This tea is made from the flowers of the Clitoria ternatea plant and changes from blue to purple when you add a splash of lemon. A real eye-catcher with a calming effect.

Preparation method:

• Bring water to a boil (100°C)

• Add 3-5 flowers to your bag or teapot

• Let steep for 3-5 minutes until the colour turns deep blue

• Add lemon if desired for a lovely purple hue

Spooky Halloween mocktail (cocktail) with tea

A spooky drink with a little bit of magic!
A combination of deep red hibiscus tea and blue Butterfly Pea Flower tea creates a beautiful play of colours.

What do you need?

For the red hibiscus lemonade

• 2 to 3 teaspoons hibiscus-rosehip tea
• 300 ml water
• 1 to 2 tablespoons honey, to taste
• juice of ½ lemon
• Optional gin for the cocktail version!

For the blue part

• 1 teaspoon Butterfly Pea Flower tea
• 150 ml water

For the creepy eyes

• • blue grapes
  • blueberries

Here's how to make it:

1. Make the red tea: Brew the rosehip-hibiscus tea with nearly boiling water. Let it steep for 10 minutes and add the honey. Allow the tea to cool and then add the lemon juice to taste.

2. Make the blue tea: Brew the Butterfly Pea Flower with nearly boiling water and let it steep for a few minutes. Allow this tea to cool as well.

3. Make the creepy eyes: Halve the grapes and insert a blueberry into each half. You can secure them with a cocktail stick if desired.

4. Tijd voor het kleurenspektakel: Fill a tall glass with ice cubes and pour in (first the gin for the cocktail) the red hibiscus-rosehip lemonade (also very nice as iced tea!), up to about three-quarters of the glass.

Then carefully pour the blue Butterfly Pea Flower tea on top. This way, the colours remain nicely separated.

Preferably with alcohol? Gin is a perfect match with Butterfly pea flower tea. 

And then comes the magic: the blue slowly turns purple due to the lemon juice! 

5. Finishing: Hang a spooky grape eye on the rim of the glass and you're done!

Tip from Tête à thé: 
You can vary a lot with the decoration. For example, use lychees, other fruit or sweets to create your own Halloween creatures.
